When the novelty of winter has worn off and we all become desperate for a bit of sunshine, creativity becomes the mother of invention.
Creating a festive indoor experience is a fun way to entertain guests or snuggle up with your honey. To further enhance your experience why not clear your living room, lay out some of your favourite mismatched blankets, dust off your ghetto blaster and don your favourite summer outfit for a delightful day in.
3 cups purple cabbage - finely shredded
2 cups white cabbage - finely shredded
1 cup carrot-grated
6 radish-finely sliced
2 scallion onions-finely sliced
3 ribs celery-finely sliced
1 red pepper cut into thin strips
1 cup chopped parsley
1/2 cup apple cider vinegar
1 clove crushed garlcic
1 tsp paprika
4 tbsp grainy mustard
2 tbsp maple syrup
Salt and pepper to taste
Toss all ingredients in a bowl and refrigerate for two hours before serving.
“Little Italy” Pressed Sandwich
1 large Calabrese loaf
1 cup of pesto
2 cups of marinated artichokes
20 slices of smoked provolone cheese thinly sliced
1/2 lb thinly sliced salami
1/2 lb thinly sliced mortadella
3 cups roasted red peppers
2 cups spicy marinated eggplant
Divide bread loaf into even halves, spread pesto evenly over each side. Lightly crush artichokes with your hands and spread them evenly over the bottom half of the loaf. Evenly layer provolone, salami, red peppers and mortadella ending with spicy eggplant. Cap with the top of the loaf; press the sandwich down until flat. Using cling film tightly wrap the loaf and place on a baking sheet. Top with bricks or a cast iron pan, refrigerate overnight. Cut into small squares (12 pieces in total).
Buttermilk No-Fry Chicken Goujons
Delicious served hot or cold
3lbs chicken breast cut into 1.5 inch strips
2 green onions-finely minced
2 cups buttermilk
1 tsp salt
1 tsp Cajun spice
1/2 tsp hot sauce or chili paste
Toss all ingredients in a Tupperware container and allow to marinate, refrigerated overnight.
1 1/2 cup all-purpose flour
1 cup crushed corn flakes
1 tsp garlic powder
1 tsp salt
1/2 tsp ground black pepper vegetable oil
Pre-heat oven to 375 degrees. Whisk together dry ingredients. Generously coat each chicken strip, arrange on a baking sheet lined with parchment paper. Lightly brush each chicken strip with oil. Cook for 12 minutes rotating them at the 6 minute mark.
1 1/2 cup graham cracker crumbs
1/2 cup melted butter
1/2 cup white sugar
1 can sweetened condensed milk
2 cups mini chocolate chips
2 cups mini marshmallows
Preheat oven to 350 degrees. Combine graham cracker crumbs, sugar and butter in a bowl. Line a baking sheet with parchment paper, evenly press and distribute graham cracker crumbs. Sprinkle marshmallows and chocolate chips over graham cracker crust, drizzle condensed milk evenly over marshmallows and chocolate chips. Bake for 20-25 minutes or until condensed milk begins to bubble. Allow to cool for 30 minutes before cutting into desired shapes.
Mojito Fruit Salad
1 cup grapes cut into quarters
1 orange cut into bite size pieces
1 cup each cantaloupe & Honeydew Melon cut into bite size pieces
2 kiwi fruit, sliced
2 cups assorted berries
1 cup mint leaves finely minced (reserve whole leaves for garnish)
Zest and juice of one lime
2 tbsp Agave nectar or Maple syrup
1/2 cup tequila
Toasted coconut for garnish-Optional
Toss all ingredients and divide evenly into martini glasses. Garnish with mint and toasted coconut.
